ここはビルの地下にあって階段も一歩奥なので？、路面に出した看板もフツーの居酒屋ランチ。で目立たない。
でも「佐賀 ふもと赤鶏」という店名で気になっていてもしかしてと訪問後に調べてやはりそうでした。
運営会社はfun function。都内に"地域酒場"を10数店舗展開中。
この界隈で私が既訪店＆好きなのは「高知県芸西村 土佐鴨」「カキ酒場 北海道厚岸」。
2021年年明け週、13時過ぎに同僚と2人でランチに出て、寒くて近くで済まそうと言う同僚をこちらへ誘導し初訪店。
地下（単独店）へ下りる階段の貼り紙は、夜も良さそうな感じ。
お店は奥に細長く、カウンター、テーブル席、大きめ個室にもできる区画。
先客2組程度で中程の4名がけテーブルに着席。
ホールスタッフさんは2名で、明るくテキパキと感じ良し。
初訪店では、お店の味付けがわかるメニュウを選ぶので→
◆みんな大好き！チキン南蛮定食〜ふもと赤鶏のやわらかいムネ肉。しば漬けタルタルソースをたっぷりかけて、最高！（※という説明書き）（900円税込）
◇チキン南蛮
・一枚揚げのカット。お肉は、肉厚、適度な歯応え、慈養。揚げは熱々。うん美味しい。
・タルタルソースはありすぎなくらいたっぷり、卵感ありねっとりと。チキンとあわせて、かなりこってりです。しかし、しば漬けを入れるのはどうか…好き嫌いあるし、ランチなら特にひねらずに、しば漬けは小鉢で供すればいいのではないかと…。
◇汁物
・つくねたっぷり、特段お出汁がとかはないけど、良いです。
◇サラダ
・ほんの少し、サラダ菜のみ。なくてもいいけど。
◇お漬物
・全くの業務用で、サラダをなくして、お漬物を地域のものにすれば良いのに、という思い。
◇ご飯
・炊き具合もお米も普通で良いです。
・お代わり無料！
◆まとめ、その他
・近隣サラリーマン向けのランチメニュウ。良いところあり、価格もお得め。たっぷり食べたい時の候補に。
・前述したとおり入りにく＆宣伝下手なので、もったいない気持ち。
・近隣店と比べて①高級店とは価格CPの良さ、方向性の違いで住み分けできる。②普通の焼鳥屋ランチとは、ボリュームなど打ち出さないと。③居酒屋のランチとは、ここ鶏だけに絞っているし、地鶏とかご当地とか、特別感を出さないと。かな。（厚岸の牡蠣、高知の鰹、に比べて鶏は競争相手多く大変そう…）
・ホールスタッフさん、テキパキしているし感じ良し！
・店内は、清潔整頓で良し！（※パーティションはなく、席間を開ける対応）
・夜、お酒は豊富な地元酒を入れ替わりで提供と。夜にも行ってみたいな。
