Food Made with rare blue eel
At Unafuji, we only use extra-large blue eels that are 30% larger than regular eels. The yield of green eel is only about 20% of the total harvest of eel. The thickness of the meat, the way the fat is carried, and the flavor are exceptional. We only purchase really delicious eel. In addition, the secret to purchasing lies in our unique route. Founder Mizuno's connections from his time as an eel feed manufacturer, as well as the connections he built with local eel farmers by visiting the market every morning, have enabled stable procurement.
Food Charcoal grilling "jiyaki" over 1000 degrees
At Unafuji, we grill our eel using a ``jiyaki'' method rather than the ``steam-grill'' method that is common in the Kanto region. The eel at Unafuji is a large, thick blue eel. In order to bring out the true flavor of this green eel, it is best to grill it at an ultra-high temperature that locks in the flavor and fat. At Unafuji, we use twice the amount of charcoal that is normally used, and even take care of the way the charcoal is placed to achieve ``jiyaki'' that reaches temperatures of over 1000 degrees. Enjoy the exquisite green eel that is crispy on the outside and plump on the inside.
Food Famous “Hitsumabushi with liver and eel bowl”
At Unafuji, the eel bowl with liver and hitsumabushi with liver are some of the specialties. We are particular about opening the belly of the eel, which requires the skill of a craftsman, to extract the plump and beautifully shaped liver. Grilled liver covered with our signature sauce, which is never left out, is also available as a single item. The eel dish with liver is available in limited quantity, so please try it as soon as possible.
