今日は土用の入り
丑の日に鰻をいただくことにしようと思っていたのですが、昨日、銀座の「竹葉亭」の前を通った時、開店前から席待ちのお客さまが列を作っている姿を見まして…
それで今日の内に食しておこうってわけ
ちょっと暑さも一休みって感じでありますので、テクテクと歩いて出かけます
証券取引所の河向い
近代的なビルが立ち並ぶ中、ココだけがタイムスリップしたかのような風情あふれる佇まいでありまして、これぞ老舗といった風格を感じるお店でありまして…
聞いてみますと、創業は明治7年 そしてこの日本家屋も築80年とのことであります
こちらのお店には入口がふたつありまして、それぞれがテーブル席用と座敷席用であります
予約などもせず一人でフラッと向かったお店でありますから、ワタシが開けたのは、当然テーブル席側の扉であります
そこには、ちょっと小さめではありますが4人が掛けることが出来るテーブル席が3つ、それに二人掛けのテーブルがひとつと言う小さなお店でありまして…
先客がふた組、そして予約席が一つ 運良く二人掛けのテーブルが空いていましたので待つことなく席をいただくことが出来ました
接客されている着物姿の方が、五代目女将なのでしょうか？ ステキな方でありました
席について、用意されたのがコレ
鰻を模った箸置きがとっても涼しげだし可愛いし… ちょっとしたアイデアで、食べる前から楽しい気分になりますね
最近、箸置きなどを使わないお店も増えてきているのですが、やっぱりこういったマナーと言いましょうか、伝統と言いましょうか
大切にしたいものですね
で、鰻
重箱一面に敷かれた鰻は、芳ばしく焼かれると言うよりは、ふっくらと蒸されたモノ
箸でほぐれるほどにふっくらとしていまして、ホックリとした感じさえありまして… タレの味に頼ることなく、鰻の風味を楽しむことが出来るモノであります
とは言え、ご飯にはしっかりとタレの味が染みていまして、そのバランスの良さにも美味しさを感じることが出来るのです
これほどふわっと軟らかい鰻を焼き上げるにはかなりの熟練が必要なのでしょうね
「串打ち三年、割き五年、焼き一生」との言葉通りに技術を感じるモノでありました
ご存知の通り、今年もうなぎの価格が高騰しているようでありまして…
お店の方にも、お客さまにも、大変なことではありますが、暑い夏を乗り切るための儀式のような、お祭りのような… そんな土用の丑の日に鰻をいただくと言う食習慣
みんなで盛り上げていきましょう
