【スープ】豚骨
100％豚骨でコトコト煮出すこと一昼夜。手間ひまかけて、白湯こってり豚骨スープを抽出します。臭みがなくサッパリ飲めます。
【麺】細麺 博多麺にしては加水率高めかな？
自慢はもちろん、シコシコの細麺。好みに応じて、バリカタからソフトまでゆで加減を調整致します。ゆで時間の速さから、お客様に提供できるまでの時間の速さも自慢との事でバリカタで注文して旨い。
「替え玉」ができるのも、この麺の特長。「かえし」で味を調整しながら、食べると最後まで楽しめそう。
【具材】ネギ、チャーシュー、キクラゲ、味玉、のり
たっぷり乗ったコリコリのキクラゲと博多ネギ。麺とよくからむチャーシューは薄くて残念。
【卓上】
白すりゴマとゆずコショウを入れると時分好みの味になりました。
