つまみも握りも素晴らしい。大将の握りっぷりも品があって会話も楽しい。
のっけから甘鯛と鯛の刺身からうまくて納得する。
濃い色のわりに酢は強くなく旨味の強い赤酢の握り。
特に食材の出所や、何日寝かせたなどのコメントは少なくて、むしろその辺りが友人との会話に集中できるいい寿司屋。
カウンターだけの店内はおよそ二回転。一斉スタートなどではなく、それぞれの予約時間に集まってくるいい寿司屋。
一斉スタートなどの仕切りは、店の都合だけ考えたやり方でここには不要なやり方。
いつでも行きたい時に自由に予約が取れる寿司屋がいい。
食べたい時にふと思い立って行ける寿司屋が好きな今日この頃。そんな個人的願望を叶えてくれる茅場町の鮨きむら。
日本橋近辺で存在する鮨屋は老舗が多いし、超のつく名店も多い。その中でもこのレベルは満足度の高いレベル。
どうしても予約が取れない店が多い最近の鮨屋事情。同姓同名の二子玉川のすし㐂邑は予約が全く取れない。そのあたりはこちらの鮨きむらは予約が取れる。
ニューヨークの寿司田で14年握っていたきむらさん、その後寿司田出身の同門の先輩「鮨よしたけ」さんで。うまいはずだわ。
それを経て今は自分の握りたい寿司を握り、チェーン店でのマネジメント経験も生きていて、柔らかな表情でうまい寿司を繰り出し、楽しい時間をくれる。
また行きます。一人でもいいし、二人でも。
