人形町にある焼肉居酒屋『伊達のくら』の名物は牛タンだ。ちなみに同店は、本店を仙台に構え、ここ人形町と茅場町に支店を構えているよう。城下町である仙台を意識したような面構えで、下町である人形町に違和感なく溶け込んでおります。
せっかくなので、仙台における牛タン文化のお勉強をしておきましょう。
始まりはアメリカの占領時。彼らは牛肉の正肉ばかりを食べていたことでタンやテールが余ったことが由来。テールスープもセットになっているのも同じ理由。当時は食糧難の時代なので白飯ではなく麦飯、新鮮な野菜が手に入らないから浅漬け、という風に定食の内容も決まっていったようです。料理の背景を知るととても面白いですね。
熟成大とろ牛たんの炭火焼き定食（３枚）、1880円也。
秘伝のスパイスでじっくり熟成したそうで、下味がしっかりな印象。炭火焼きのエッセンスもあいまって、シンプルながらご飯のすすむ味わいになっております。もちろんとろろに醤油でも同じくご飯がすすむ。それを見越してか、ライスの大盛りやおかわりも自由になっているのが嬉しいポイント。ご馳走様でした。
