高級店で食事をする際、なるべく個人店を選択するようにしています。
その理由は、お店の個性を楽しむため。
昨日は、忙しく行きたい個人店をチェックする時間も無かったので、久しぶりに叙々苑に入店。
タンの盛り合わせや特選肉の盛り合わせ、薄切りロース、カルビクッパ、牛すじのスンドゥブなどを注文。
やっぱり叙々苑は素晴らしい。
お肉もサービスも文句なしで、良いです。
王者の貫禄って感じ。
高級個人店は、オーナー兼シェフが多いので、お店の隅々までこだわり抜く事が出来てクオリティが高いお店を作り込めるのかなーと感じる一方で、叙々苑のようなチェーン店展開している店で、味、サービス、設備など全ての面で高いクオリティーを維持することは、とても難しい事だと感じます。
同じ食材、同じレシピを使っても、下処理方法、包丁の使い方、火加減や鍋の振り方で味が違ってくるのが料理の世界。
どの店舗も高いクオリティーを維持しながら高級チェーン店を維持していくノウハウはすごいと思います。
