渋谷が花街だった３０年前から営業。
「いいネタを集めて、きれいに握って、出すだけでは、料理人じゃない。」
「ネタをどう上手く食べていただくかを考え、お客様に驚いていただくかを日々挑戦するのが職人。」
と、ねじり鉢巻きの大将は気合が入っていて気持ちいい。
神泉で人気のイタリアンシェフの紹介で来店。
つまみが美味しい。
見た目より味重視。
小料理屋に来たかのかと錯覚を覚えるほど。
酒もすすむ。
「たこのブラックペッパー」は、牛タンの味。
おすし屋さんで牛タンの味とはびっくりした。
すしは、お好みでつまんでいく方式。
金目の混布〆、煮ハマグリは、オリジナリティ高く絶品。
明太子の握りは、初めて頂いたが、驚くほどうまい。
北海道のタラコを店で軽くつけて握ってくれる。うまい。
