素材至上主義の潮流に迎合しない名店。
某雑誌で「最強コスパ寿司」と特集されていてなんだかなぁ...と。
しかし、近所なので気になっていたところ、ちょうど友人に誘われた。
東急本店から代々木八幡方面へ向かう、いわゆる「奥渋」の裏路地。
一軒家のような建物で、なかなか良い雰囲気。
カウンター席を利用。
ゆったりと席幅がとってあるのも良い。
さて、肝心のお鮨。
...だが、まず鮨が出てくる前に、先付け(3種類)、刺身から始まり、つまみがたくさん出てくる。
どれひとつとっても「盛って出しただけ」なんてものは一つもなく、鮨屋にしてはちょっと変わった、テリーヌなどの手の込んだ一品。
時鮭、毛ガニ なんかも使っており、「そんな高いもの使って大丈夫なんですか？」と聞くと、
「つまみは、ほとんど趣味でお付けしています」
と店主。
つまみもなかなか絶品だが、
鮨を食べてみれば、その言葉に嘘がないことはわかった。
グレードを考えると、おまかせコース20,000円以上に設定している店も多いと思うが、ここは、2人で生ビール、日本酒2合 を飲んで、お会計は、1人 16,000円ちょっとだった。
それに、変わったつまみが出てくると、「鮨で勝負してない店」のようなイメージだが、鮨は、こちらが勝手に想像していた軟弱なイメージを覆す、ど直球の江戸前鮨。
お鮨！ すごく美味しいです！
寡黙な店主がぽつりと言った
「高くて美味しいと当たり前ですから」
その言葉に、内に秘めた思いを感じる。
良いネタ使ってるんだけど、最近の鮨店に多い「素材至上主義」を前面に押し出したアピールではなく、「仕事 (技術・工夫)」で勝負をするという姿勢なのだと見受けられた。
いやぁ...不器用だなぁ...。
実直な仕事を感じる、お鮨が美味しいお店でした。

「行ってみたかった」と言う友人2人と再訪。
一見、無愛想に見える店主だが、顔を覚えていてくれて、まだ2回目なのに、連れて行った友人にドヤ顔ができた(笑)。
前回同様、鮨の前にツマミがたくさん出て来て酒がすすむ。
まず生ビール。
前回も思ったのだけど、ここの生ビールは一際美味しく感じる。以前、サーバーの手入れが行き届いている店の生ビールは旨いと、とあるビール会社の人が言っていたことを思い出す。店内の清潔感を思うと、きっとサーバーも手入れが行き届いているのかも知れない。
続いて、今回は店主おすすめのペアリングの日本酒から。
生憎、銘柄を失念したが、ツマミに合わせて5杯が供されるのがよい。
刺身に、ツマミはテリーヌやら鮑やら...
友人が楽しみにしていた白子の酒肴は、今回は、虎河豚の白子。2人とも「旨い！」「これは他にはないね」と唸っていた。
さて、お鮨。
相変わらず、作りおきしないと言うシャリは温かく、最初は白いシャリに合うネタから始まり、後半赤いシャリに合うネタへ。
個人的に、シャリが好みと言うのもあるが、本当にネタのグレードは高いと思うし、旨い鮨だと思う。
天然の黒マグロ使ってます。
中トロとヅケ、香りが良くて美味しかったなぁ。
ハダテのウニと小川のウニ使ってます。
小さなウニご飯と海苔で巻いて手渡しされるウニ、2種類どちらも美味しかった。
車海老も 茹で立てを握ってくれるので、甘さが際立ってとても美味しかった。
それにしても、やっぱりネタの旨さを引き立てているのはシャリ。
相当拘っているらしく、ネタとよく合ってるんだよなぁ。
あと、特筆すべきは玉子焼き！
いわゆる、カステラタイプの玉子焼きは、焼くのに3時間かかるらしい。
なんかもう、上質な和菓子をいただいたような。
「秘書が選ぶ高級手土産」とかにでもなりそうなw
人生で食べた、鮨屋の玉子焼きの中で一番美味しかった。
今回のお会計は、ビール、ペアリングの日本酒に、また追加で酒を飲んだので、1人18,000円ほど。
かなり飲んだ。
グレード、内容を考えると、とても安く感じる。
再訪して、前回と比べて評価が下がることは１つもなかった。そういう店も意外と少ない。
改めて、1つ1つのネタや酢飯を注意深く味わったが、前回よりも美味しいと感じる物もあった。
店主が、おじさん常連客とべったり... なんてこともなく、居心地も良い。
総じて、また行きたいと思えるお店。
