広尾の「鮨在」で個室カウンターを任されていた阿重田さんのお店。
東急本店（建替中）前のオーチャードロード沿いのビルのB1F。
シックで高級感のある空間で、奥には個室カウンターも。
おまかせ33,000円（税込）です。
初めて飲んだ寿司サイダーをお供に、頂いたもの。

40分かけて火入れしているので身が固くなりすぎないとのこと。
レア感が良かったー！肝も使っているのもアクセントに。
◇車海老
茹でた車海老ってもっとオレンジっぽくなると思うのですが、こちらは朱色で。
茹で過ぎないようにしているそうで、蛤に続き、レア感が大変好みでした。
（私は茹でた車海老より生の甘海老や白海老が好きなのです。）
◇穴子
砂糖ではなくアガペシロップを使っているそうで、砂糖のザラっとした感じが皆無。

既成概念にとらわれず、それぞれのネタを一番美味しくする方法を考えられているのが素晴らしいなと。
色々お話も伺えて、とても楽しいひと時を過ごせました！！
