清水さんは鶏の旨みがつまったコラーゲンたっぷりの鍋をメインに厳選された鶏を使用した1品料理も味わうことができる落ち着いた雰囲気のお店。
今回いただいた全8品の贅沢コースはスタッフさんが鍋を作ってくれて、絶妙な火加減で鶏のいろいろな部位を味わうことができるのが嬉しいポイント！
まずお通しとして提供されたお豆腐はすごく濃厚で驚いたし、食材にもこだわっているのが伝わってきて、他のお料理も楽しみになった！
茶碗蒸しは青森県の真っ赤卵という卵を使用されていて、黄身が丸ごと1個のっていたからインパクトがあった。茶碗蒸しはよくあるお料理ではあるけれど、お店独自の工夫もされていて、新しい発見もあった。途中で添えられていた酢橘をしぼっていただいた。
鶏胸肉のたたきはさっぱりとしていて、美味しかったし、鮮度の良さも伝わってきた。
コールスローサラダはボリュームがあって、ピリ辛で気に入った。鶏節がたっぷりとかかっていて、旨みが感じられたし、コーンなどの甘みもあってバランスが良かった。
そして骨付き鶏は熱々でお酒のすすむ味付けだった！複数のスパイスと醤油だれで長時間煮込んでからカリッと揚げているとのこと。手が込んでいたし、柚子胡椒もアクセントになっていて、絶品だった！
メインの水炊きの鶏はもも、むね、つくね、砂肝、せせり、ハツの6種類。野菜はキャベツ、ネギ、クレソンの3種類。白醤油ベースの自家製白ポン酢と2種の柚子胡椒をお好みで付けていただいた。ももは柔らかかったし、つくねは食感も良かった。砂肝は鮮度が抜群だったし、ハツも上質で気に入った。野菜は鶏を全ていただいたあとの旨みのつまった鍋で作ってくれたから最高だった！キャベツは火が通りやすいように千切りにされていたし、クレソンは苦みも少なくて、美味しかった。
〆のごはんは卵かけご飯を選択。残った鍋のスープと生米から作っていて、おこげもあって絶品だった。卵は茶碗蒸しと同じ真っ赤卵で濃厚だった。これはここでしか味わえないお料理だと思う。
デザートのプリンは上品な甘さで美味しかった。中に呉豆腐が入っているのが特徴で、満足度も高かった！
今回のコースはスタッフさんが鍋を全て作ってくれるのが魅力的で水炊きを最大限に味わうことができた。自分で鍋を作るのも楽しいけれど、作る順番なども工夫されていたし、丁寧に説明してくれたから、より美味しく感じられた。
店内は広々としていて、座敷席もあったからいろいろな用途で利用できるし、渋谷ストリームは駅から直結で行きやすくてありがたかった。
