Spanish Cuisine 's Restaurants "Minebaru" operated by La Cresta Co., Ltd. was relaunched on February 1 as the new "Minebaru" in Shinsen and opened in the place where its sister store "TASCA TOKYO" was located. Chef Yoshihiro Mine, the owner-chef, trained in Osaka, then studied in Spain, where he gained experience at several Spanish Cuisine restaurants in Tokyo. In 2011, he became independent and opened "Mineval" in Shinsen. It is said that it is supported by many gourmands as a place where you can enjoy high-quality Spanish Cuisine and Spanish wines that make use of seasonal ingredients by Chef Mine. This time, restaurant is a casual bar on the first floor and a Restaurants where you can enjoy sophisticated course meals on the second floor, and you can enjoy the Spanish Cuisine based on the concept of "Mine Spanish talking with modern and traditional materials" that Mr. Mine is aiming for. The bar on the first floor is a casual space where you can casually drop in and enjoy small plates with Spanish wine and craft beer. In addition to the lineup of 20 kinds of tapas, Prosciutto, homemade ham, paella, etc., you can also try the Restaurants menu on the second floor. The Restaurants on the second floor offers Chef Mine's seasonal dishes to five groups of guests a day for selection courses. The course consists of about 9 dishes: amuse, 4 kinds of tapas, appetizer, main course, paella, and dessert. The tapas on the selection course are "foie gras Ice cream, cardamom-style sable". A cookie sandwich made with foie gras terrine in the shape of a Ice cream and dried grape jam sandwiched between sable kneaded with cardamom. The specialty "Salmon Pudding" is a fish dish based on Spanish Cuisine pastel de cabracho. A fish patty made by adding tomato puree, eggs, etc. to salmon meat, steaming and grilling, and cooling to harden it. Served with plenty of marinated seafood such as scallops, abalone, smoked salmon, and salmon roe. It is a special gem in both taste and appearance. In addition, the rice dish is paella made with seasonal ingredients. On the day I visited, I was served "Oyster paella" using seasonal Oyster. As for drinks to pair with meals, we recommend the pairing course (6,000 yen), where you can enjoy 7~9 kinds of Spanish wines, mainly sherry, selected by Chef Mine. In addition, you can enjoy the "Lunch Course" (8,250 yen) where you can enjoy tapas and Meat Dishes, and the "Paella Lunch" (3,300 yen), where you can enjoy paella and amuse, for lunch on Saturdays, Sundays, and holidays.
