［総州古白鶏とは］
千葉県のブランド鶏。クセのない旨みと
まろやかなコク、弾力のある歯ごたえをもつ。
［ガランティーヌとは］
鶏や鴨の肉を広げ、中にひき肉などを
巻いて太巻きのような形にして茹でたり
蒸したもの。輪切りにして食べる。
［ベルベーヌとは］
上品な芳香が特徴の南米原産のハーブ。
別名レモンバーベ－ナ。

モチムチ感触が快感のキターラ。パッと風味
弾けるケッパーが非常にいいアクセント。
［キタッラ、キターラとは］
断面が四角の平打ちパスタ。イタリア語で
「ギター」の意。キタッラをつくる道具が
木枠にギターのような細い弦を張ったこと
からそう呼ばれるようになり、そこから
生み出されるパスタもそのままキタッラと
呼ぶようになった。
［プッタネスカとは］
イタリア語で「娼婦風」の意。
アンチョビやオリーブ、ケッパーの塩味や
唐辛子の辛味を利かせたパスタ。
［ビアンコとは］
イタリア語で「白」「白ワイン」の意。

イタリア北西部リグーリア州ジェノヴァで
生まれた手打ちのショートパスタ。
手のひらで4～5cm長さの細いひも状に
伸ばし、左右の端がねじれた形につくる。

無花果の甘酸っぱさがたっぷりの鴨を引き立
てる。レモン風味のレバーペーストが白眉。

を残しつつも柔らかく、臭みもない肉質。
