◾️お店について
恵比寿駅西口から2〜3分のビルの9階にある。
2022年10月から美馬料理長が厨房を預かる。
美馬さんは京都の老舗料亭、瓢亭の出身。また、3年程、ロサンゼルスの日本領事館の公邸料理人を勤めていた。店長の青山さんも、ロサンゼルスの和食店でミシュラン一つ星を獲得している。お二人とも英語が堪能なので、外国人のお客様も多い。
料理は隅々まで目の行き届いた素晴らしいもの。
◾️料理
和食の命、出汁は昆布と鮪節。鰹節の血合いを除いてを足す程度。鰹節メインの出汁より味に奥行きが合って、大変美味しい。
刺身の断面にはしっかり角があり、切り身が美しい。

【献立】
吸出し 菊芋 すりながし
先付 車海老 帆立 そら豆
造里 桜鯛(大洗) 本鮪(三陸)
煮物椀 黒睦(銚子) 筍 こごみ 木の芽
炊合 筍(京都塚原) 花山椒
強肴 丸鍋仕立て 徳之島産天然鼈
焼物 太刀魚(富津) ちり酢
今回、事前に丸鍋を所望したら、二つ返事で引き受けてくださり、お陰様で天然鼈を味わうことができた。生姜を効かせて、全く臭みは無く、鼈の旨味を味わう。
刺身のあしらいには自家製の海苔の佃煮があって、鮪に良く合った。
◾️お酒
大将はソムリエでもあり、ワインが大好きだそう。鼈にはしっかりめのシェリーを提案してくれたが、これが良く合った。予約時にコースを決めて、ワインペアリングを希望すれば、メニュー以外の銘柄も合わせてくれるとのこと。
品数の多いコースもあるが、今回の酒膳コースはお得でおすすめ。特に和食とワインという方はきっとワクワクすると思います。

料理長は目配り、気配りが隅々まで行き届き、居心地が良い。
