「BARDEBIS（バルデビス）」
【恵比寿/スペインバル】
所用を済ませた後に夕食を食べようと恵比寿を徘徊。当初は鉄板焼きを目指していたが、途中で路線を変更してスペインバルへ。鉄板焼きからパエリアを連想してしまった。
歩いている途中にたまたま見かけた小さなお店へ飛び込むと、幸いカウンターの端が空いていた。20席程度の小さな箱で厨房とフロアを計２名で回している。
クルスカンポを飲みながら、タコのガリシア風、天使の海老のアヒージョ、マッシュルームのセゴビア風、トリッパの煮込みと定番どころを注文。
さらに店員から鱧が入っているのでフリトスはどうかと薦められる。チェーン店以外では店のレコメンドに従うようにしているので、ここでも同様に対処。
ただ、結果として鱧はいまいち。骨切りが丁寧にされていないのでどうしても骨が気になってしまう。味はよいのでやや残念。
厨房から席が近く、出来立てが運ばれるため、アヒージョの沸騰加減が地獄絵図状態。そしてもちろん口の中を火傷するが、美味しさの代償としては些細なこと。
付け合わせのパンはセモリナで、一つは全粒粉。
最後にパエリア。比較的しっとりとした仕上がりで、これも悪くない。
一通りバルの定番を注文した気になっていたが、唯一生ハムを注文し忘れた事に後で気が付いた。生ハムホルダーを見かければ注文していたはずなので、置いていなかったのかもしれない。まあ、セゴビア風に入っているので、あれで我慢しておこう。
ドリンクは、クルスカンポの後にカヴァ、サングリアの赤、アモンティリャードと、こちらも一通り。
普段は日本酒、焼酎、スコッチ、泡盛をよく飲んでいるが、実はラムやシェリーも好きなお酒で結構色んな種類を飲んでいる。ただ豊富に取り揃えている店が少なく頻度が低いので、銘柄等々をすぐに忘れてしまうのが難点。
もっとも、シェリーに関してはシェリークラブで覚えた４象限のポジションを利用して、注文前に店員に確認することで、外すことが少なくなった。
料理は全体的に塩気が強い気もしたが、その分アルコールが進むのであまり気にしない。
小さい箱だが、店員のコミュニケーションもよく、料理も程よく、普段使いとしては良いお店。
つまみ文化のある国の料理は酒飲みにとって嬉しい事この上ない。
