I made a reservation on a holiday and came around 7pm.The restaurant was about half full and had the atmosphere of a super stylish bar.This Ramen kaiseki restaurant was once a hot topic, and apparently it used to be an introduction/membership system, but now it's widely available for reservations. Ordered Ajillo course, shandy gaff, and a glass of cold sake, 11,500 yen per person, expensive.I will write down the contents and impressions of the course below. - Homemade high quality soy sauce dashi soup. Gradually add soy sauce, green onion oil, and Japanese pepper to the chin soup stock. I got a glimpse of the process of making the Ramen soup. ・ Ramen parfait with salmon roe and seaweed. The salmon roe, seaweed, green seaweed, and fried noodles are mixed together and eaten, but they are petit, crunchy, fluffy, and chewy. A variety of textures and flavors are mixed together. ・ Char siu in a marihana tea sauce The char siu is boiled in jasmine tea and then roasted on a burner. The cabbage absorbs the fat that has fallen off, making it the perfect snack with a punch. ・ Three kinds of seasonal vegetables There are three types Ajillo, but the lineup includes more vegetables than that: broccoli, shiitake mushrooms, lotus root, eggplant, potatoes, and maitake This oiliness is unique, and if you want to enjoy the richness of vegetables and root vegetables, Ajillo is the best choice. The taste evolves as it absorbs wax and oil. - Confit of wine-aged spare ribs. This refers to the chashu in Ajillo, which is covered in olives and served piping hot. - Today's GENEI Ramen The type of Ramen changes depending on how many times you come, but it's your first time. I was served soy sauce Ramen, and the chewy noodles were delicious. - Gen'ei soy sauce egg-cooked rice The mellow, extra-rich egg and rice go together smoothly, and when you add Ramen soup to make it into a rice porridge, the flavor increases. By the way, the word TKG seems to have originated from this store. Vanilla ice cream with lemon, salt, and olives. The sweetness of the vanilla, the sourness of the lemon, the richness of the olives, and the element that brings out the sweetness of the salt. It was a perfectly balanced ice cream.
