恵比寿 の馬肉専門店「気まぐれバル 恵比寿 #Whim(#フィム)」は バーの様な空間で ヘルシーな馬肉を満喫。駅からも近く徒歩3分ほど、看板は大きく出ていないのでビルの表示をよく見つつ向かえば 間違いなく到着できます。
名物はなんと言っても”馬肉”。数量限定・要予約の熊本から直送される「レバ刺し」を、はじめ「馬刺し五種盛り」など 拘りの馬肉たち。更に「炙りハラミのカルパッチョ」など アレンジも多彩でお酒にもベストマッチでした。
お通しに軽く「モモ肉のユッケ」が出るなんて！初めから嬉しいスタートです。合わせたお酒はシャンパーニュの「ローラン・ペリエ」。手軽にグラスでオーダーが入れられるのがイイですね。
「馬刺し五種盛り」は。サーロイン・もも・タン・ハツ・ロース、それぞれ歯ごたえや味わいが違います。牛に比べ脂がかなりサッパリしているので、生食は断然馬肉の方が私は美味しいと思っています。おろしニンニクとネギを巻き 九州の少し甘いお醤油につけて食べると、肉自体の旨みが口に広がります。
また「レバ刺し」は、鮮やかな色合いとぷるんとした質感。こちらはごま油と塩を付けて口に運びます。若干レバーを苦手にしている私でしたが、、、きっちり半分頂きました！！
新メニューだった「炙りハラミのカルパッチョ」。これもちょい甘めのタレと卵黄のコク合わさり美味♪ しっかり厚みのある切り方なのに、食べやすいお肉でした。
「チーズと茸のアヒージョ」。間に少し温かいものが食べたくこちらを と思ったら灼熱でした！ 器までかなり熱々のぐつぐつ！この見た目だけで美味しそう思えてしまいます。オイルよりも出汁ベースな仕上がりなので食べやすく味が濃い。バゲットを付け、たっぷりスープに浸して食べて下さいね。
そして 生だけでなく「馬肉焼き」もぜひ食べて欲しい逸品。”馬ぃ焼肉”って名前が付いているんです！ もちろん 生でも食べられるのもばかりなので、かなりレアな焼き加減が推奨されていました。盛り合わせの他、様々な部位から単品盛りも選べ 私は「ハラミ」をチョイス。テーブルにのったロースターで軽く温めたら食べる、そのくらいの火入れで充分でした。
〆は 「馬肉ユッケといくらのミニ丼」キラッキラの見た目が宝石箱みたい。ミニなので ほど良い大きさにつられ、、ついつい完食！ご馳走様でした。
”恵比寿”と言う場所柄か「パーフェクトエビス」店であり、ビールの美味しさも折り紙付き！（口当たりの良さを決める「クリーミーさ」、美味しさをそそるグラスの「クリアさ」、ビールのうまみを最大限に引き出す「温度」。3つの基準を高いレベルでクリアした店舗）また、年間で一度しか出荷しない 限定 瓶ビール「ヱビス マイスター ザ・ロイヤルリーフ2019」もグラスで飲めるのがかなりビックリ！拘りのホップを体験してみたい方はお急ぎ下さい。
