店内は凛とした雰囲気で、落ち着く雰囲気。
本来は最初から握りを出すスタイルのお寿司屋さん。大将の意に反してつまみを少しいただくことに。
これが、何気なく美味しい。「甘鯛の昆布締め」、「蛸のやわらか煮」、「小さな粒の生いくら」、「煮ハマグリ」、まだ行きますか？と聞かれ、はいと答えると、なんと、「ザーサイの浅漬けとオリーブ」と、来た。全てが美味しい。
鮨はシンコからスタート。
酢飯の酢は個人的にはもう少し強く効いてる方が好き。
ネタとしては真子鰈、中トロ、秋刀魚、スミイカ、帆立、マグロの赤身、ミル貝、ウニ、海老、穴子、玉子、最後は干瓢の鉄砲巻きをいただき、デザート？には食用のほおづきでフィニッシュ。
酢だけがもう少し強くして欲しいが（しつこいって？）店の雰囲気は素晴らしい。
大将は半蔵門の有名ホテルで33年修行し、2013年、馴染みのない恵比寿に独立オープン。
なんとも落ち着きのある方、話しやすく紳士。
予約もせずにふらりと来て空いていたら、数貫だけ食べて、帰るのもありですか？と恐る恐る聞いたら、「はい、イイですよ。でも、予約はもらった方が安全ですね」との返事。これだけ食べても15000円以内。
いい店なので、普通に使いたい。
