フランス・アンジェのパティスリー/ショコラトリー「ル・トリアノン(Le Trianon)」や、ブーランジェリー/パティスリー「ル・グルニエ・ア・パン(Le Grenier à Pain)」のオーナーシェフ・ミッシェル・ギャロワイエ(Michel.Galloyer)氏によるパン屋さん。日本では2013年に麹町に本店をオープン、現在は麹町とアトレ恵比寿の2店舗があります。
店頭にはコンクール(The best traditional baguette in paris)で2度優勝したバゲットをはじめとするパン、クロワッサンやブリオッシュなどのヴィエノワズリー、ガトーなどが並んでいます。
カヌレ・￥３２０
フランス・ボルドー地方の伝統菓子・カヌレ。しっかりと焼き色のついた外側はしっかりかためで、内側はしっとりなめらか。中心部はかためのカスタード状でとろけるような食感。
焦げたカラメルのほろ苦さ、玉子の甘みに、バニラの風味にほんのりラムの香りが広がるカヌレです。
さくらカヌレ・￥３３３
桜の花の塩漬けとアイシングがトッピングされた季節限定のカヌレ。こんがり焼けた外側はカラメルの香ばしさが際立つ風味、さくらペースト入りの生地はほんのり桜色。
