恵比寿と広尾の間にある小さい
入り口が特徴のお店です。
和モダンな店内は雰囲気がよく
この日はカウンターはもちろん、
テーブル席もほぼ満席でした。
いただいたのはスタンダードコース
(9,900円)。

旬の食材を使った前菜、魚介、野菜、
和牛とバランスのとれたコースです。
黒毛和牛の大吟醸カットとは、
日本酒の製法に準え肉のスジや余分な
脂身を削ぎ落とすという当店ならではの
技法なんだそうです。
この日は群馬のA5ランク黒毛和牛
ランプのステーキ。
ミディアムレアくらいの火入れで
湖塩、九州の甘口醤油、わさび、
ガーリックチップでいただきます。
ランプ特有の弾力感、赤身の旨み
が強いお肉です。
脂がほどよくのり重たくないので
この量でもぱくぱくいただけます。
ホタテはしっとりと水分が残るような
火入れで食感よく
ブラックオリーブとアンチョビの
タプナードソースの塩味や旨み、
うにのまろやかさがいい意味で複雑な
味わいが表現されています。
〆のガーリックライスを和出汁で
お茶漬けにできるのもさらさらっと
食べられるいい工夫。
一万円以内で食べられる鉄板焼き、
美味しかったです。
