You can enjoy Japan's oldest native Japanese black beef, ``Takenotani Tsurushi,'' which has been preserved without any other cross-breeding since the Edo period. For over 40 years, a cowherd named Gomi Hirata, who was concerned about the future of domestic cattle, has risked her life to protect them. Unlike modern Japanese black beef, which is a hybrid breed, it takes nearly twice as long to ship. Only 4 to 7 cows are shipped each year, and there are now only three types of genuine Kuroge Wagyu: ``Kuchinoshima Beef,'' ``Mishima Beef,'' and ``Takenotani Tsuru Beef.''
