イタリア語では「ステラ」、フランス語では「エトワール」、優秀な店に与えられる勲章としての「星」、ご存知タイヤメーカー創立者、ミシュラン兄弟が1900年にはレストランガイドブックを作成し、優秀なレストランに「星」を与えていたそうです。
庶民のわたくしですが、正直に誠実に勤務しているご褒美に、代官山の「星獲得」レストラン、「レクテ」さんにお邪魔することとなりました。
まずは前菜。豚肉を使ったガレット、溶けるチーズのカナッペみたいなもの、チーズが尋常でなく芳醇で複雑な香りを放ちます。コースの完成度を期待させる前菜です。冷製の前菜として、マグロのサラダ仕立て。野菜の味、香りがマグロの旨みを引き立てます。野菜にはどれも一手間加えられており、単独で食べてもよし、マグロと合わせて食べてもよし、素晴らしいコンビネーションです。続いて、温かい前菜としてフォアグラとセップ茸の料理。これもキノコの香り、ソースの香りを多重奏的に構築させています。
魚料理、一品目は、真鯛。中はほんのり生の部分を残して、皮は炭火でパリッと香ばしく仕上げています。美味しい、素晴らしいの言葉以外、出て来ません。
魚料理、二品目は、鮑。きのこと一緒にリゾットの上に奥ゆかしく乗っております。リゾットは鮑の肝も塗してあり、かなり濃厚。せっかくの盛り付けを崩して、混ぜ合わせていただきます。鮑の旨味を十全に堪能できます。
いよいよメインの肉料理。短角牛、三田牛の食べ比べです。肉は充分に熟成されており、低温で調理されているため、味は勿論のこと、肉の良い香りまでもが楽しめます。また、付け合わせのメークイーンのローストの美味しさが感動的です。
デセールは洋梨を使った一皿。食べる直前に、サングリアのソースをかけてくれます。甘さと酸味が見事に調和したスイーツです。
このお店の最良のスパイスはシェフ、ギャルソンの方々のホスピタリティーです。料理の説明の間に気さくに話をしてくれ、こちらのお腹の満たされ具合等、常に気に掛けてくれます。さすが人も食材も「星」も正しく輝くお店です。
普段使いできるお店ではありませんが、ここぞの時にはまた訪問したく思います。本当に美味しいお料理で、楽しい時間を過ごせました。
