今回は翡翠コースで、後は今月は結婚記念日なのでアラカルトも頼んでいます。
まずは、毛蟹と松茸、千葉県産の落花生を使った茶碗蒸しから。
松茸の香りもふわっとして美味しいです。
コロナで4ヶ月ぐらい休業していたそうですが、最近はお客様も戻られて最近は満席が続いてる人気のお店みたいです。予約しといて良かった。
黒毛和牛のスープは、淡路島さんの玉ねぎも使っています。コップの縁についている柚子胡椒を混ぜて召し上がります。
こちらでは、鹿児島県産のお肉を、主に使っているとのことです。
お魚は、天然の太刀魚。
青森のニンニクのピューレと焼き茄子のおひたしが下にひいてあります。上にはパン粉がかかって香ばしいです。
アラカルト
高知県産伊勢海老
瀬戸内海のフグを使ったブイヤベースです。ナージュ風、フグや蛤などの貝の出汁をふんだんに使っています。
牛テールのシチューはほろほろと溶けて、どのくらい煮込んだんだろうというぐらい柔らかいです。
サラダは、北軽井沢群馬県キャベツ畑の紫蘇やトマト、オレンジとオレンジの皮を使ったドレッシングです。ドレッシングに梅も入っているので、さっぱりとした味付けになっております。
メインのステーキと野菜は大分県のステーキ椎茸、ホワイトアスパラ、白ナスは、トロナスと言われていて、とろっとしている茄子です。ハーブの根っこセルフィーユはお芋みたいな食感です。
フルールドセル わさび、玉ねぎ入りの出汁醤油で頂きます。
さすがステーキ、脂もしっかり乗っていて素晴らしい味です
デザートはカシスシャーベットで締めです。
シェフとの楽しい会話もあり、料理も詳しく説明しただきとても有意義な時間を過ごせました。
