初訪問です。
新宿駅から徒歩6〜7分の場所にあるこちら。
日曜の昼12時半ごろで4割ほどの入り具合でした。
店内はカウンター席とテーブル席があります。
店員の接客はややそっけなく、こなす接客という感じ。
海外のお客さんの割合は多かったです。
本日頼んだのは、
極ばんから 1,050円
5分ほどで運ばれてきました。
この立地なので価格は高いのですが、ボリュームはわりとあります。
大きな海苔が一枚、チャーシューが一枚、太めのメンマ、そして刻んだねぎ、背脂と大きめの脂身が浮いてました。
旨味とは違う甘さのあるスープで、醤油ベースの濃厚豚骨とのことですが、そこまで豚骨は濃厚ではないように思いました。背脂などの豚の旨味がわりと効果的で、刻んだねぎでもったり感を少し緩和します。ちょっと醤油は濃いめの味付けです。ややしょっぱく感じました。
麺はちぢれた細めの麺でやや低加水気味でポリポリした感じ、醤油の強さに小麦の甘さとスープにもともとある甘みがのります。
チャーシューはあんまり存在感はなかったですが、やわらかくスッと食べきりました。
メンマはわりに太めでコリコリと食感があります。
これは少し辛さがあった方がバランス良いかもしれないので、次は辛ねぎとかにしようかな。それか別のスープの味噌かな。
