鰹節がたっぷり乗ったつけ汁は節や煮干しといった魚介を動物系がどっしりと支えていて、
魚介系の素材からも由来しているのか塩味もしっかりあり麺が進む味わい
平打ちの中太麺は厚みにわずかなばらつきがあり、もちもちの部分、ぷるぷるの部分、と食感に変化が生まれて食べ飽きない
また、麺の形状や太さによるものなのか、とても啜りやすく感じられたのが印象的だった
トッピングは全てつけ汁に入っていて、チャーシューは肉質がしっかり、メンマは柔らか
麺を2/3ほど食べ進めたところで卓上の柑橘酢を麺に直接かけて味変
店内のサーバーからセルフで注ぐスープ割りは鰹節、煮干し、柚子の３種があり、今回は煮干しを選択
サーバー横に湯呑みが置いてあり、出汁をそのまま楽しむこともできた
オーソドックスな濃厚魚介つけ麺でありながら、店内で削る鰹節や麺、選べる割りスープなど随所に創意工夫やチャレンジが垣間見える一杯でした
