新宿三丁目駅の程近く。はやし田系列のお店。
店内は広いとはいえませんが、導線がしっかり確立されており、座席間隔も広めのため居心地の悪さは感じません。
醤油そばと数量限定ののどぐろそば、まぜそぱと昆布水つけ麺の4枚看板。
「特製のどぐろそば」(1,250円)とランチ限定メニューの「大山鶏のご飯」(100円)を券売機で購入。
最初に運ばれてきた大山鶏のご飯は、特製ダレに漬け込まれた大山鶏の細切りとネギを白飯に乗せた一品。
量は多くはありませんが、100円という値段はお得すぎます。
特製のどぐろそば。
スープを1口口に含んだ瞬間から、強烈な魚の旨みが押し寄せます。のどぐろのアラで出汁をとり、のどぐろの香味油も使用。白醤油を使い、見た目はとても透き通ったスープなのに、最初からこれだけのどぐろが強く主張するのは嬉しい裏切りです。
麺は手打ちでパツパツの細麺。しなやかで弾力があります。
極太メンマ、3種のチャーシュー、半熟煮卵が脇を固めます。
3種のチャーシューはレア豚ロース、レア鶏むね肉、豚バラ燻製焼き。
卵は黄身の濃厚さが特徴的なマキシマムこいたまご使用。
昆布水つけ麺の麺にはタピオカ粉を使用しているようなので、次回はそれを。
