豚しゃぶ＆サムギョプサル革命
東京肉しゃぶ家を手掛けるオーナーが今度は豚肉で新たなお店を立ち上げたと聞いて行ってきました。
店は、歌舞伎町のど真ん中。入口には懇意の料理人からの無数の胡蝶蘭。お邪魔した時は店の中にまで溢れてました（笑）
店内はカウンターのみの東京肉しゃぶ家とは違い、テーブルと半個室で60席ほどとなかなかの大箱。
料理は豚しゃぶとサムギョプサル（厳密には三枚肉以外もあるのでサムギョプサルだけではないらしいのですが、ここでは豚焼肉を纏めてサムギョプサルと書きます）がメイン。
豚しゃぶだけのコース、サムギョプサルだけのコース、両方食べられるコースなど色々用意されています。
使用する豚も銘柄豚、ブランド豚ともその日の仕入れで変わるみたいですが、オーナー選りすぐりの豚肉がテーブルに並びます。
この店が凄いのは、肉に拘るだけではなく、前菜やサイドメニュー、そして使用する薬味や調味料に至るまで一切の妥協がなく最高のものが提供されます。
確かに豚しゃぶ、サムギョプサルとしては高額な部類に入るのでしょうが、その価値は十分かと思います。ただ、その価値がすべてのお客さんに正しく伝わるかは工夫が必要になってくるかもしれません（これがなかなか難しい）。
なんにせよ歌舞伎町にまた面白い店が誕生しましたよ〜

久々のPRETTY PORK FACTORY。最近はランチのとんかつKatsuプリポーばかりでしたが、この日は絶品豚しゃぶを堪能。連れの腹具合も考慮し、豚しゃぶだけのコースに一品料理を2品ほど追加。
コースは5,000円台から用意されていますが、しゃぶしゃぶセットに加えて前菜、豚肉のハンバーグ、テール煮込み、デザートが付く十分すぎる内容。
前菜もしっかりと作り込まれていてとても5,000円台のコースの代物とは思えないクオリティ。テール煮込みは本家東京肉しゃぶ屋の名物料理。追加で注文した豚トロの塩麹煮込み、蒸し餃子もめちゃうま。
豚しゃぶは銘柄豚を選びましたが、ロース、肩ロース、バラの3部位がたっぷりと。野菜もしっかり美味しく、つけだれ、薬味もバラエティがあって最後まで飽きずにいただくことができます。
1人10,000円以下で食べられる食事としては都内ではほぼ最高レベルでしょう。歌舞伎町の雑踏に抵抗ないなら超オススメです。
