今回のオーダーはダルバート。チキンかマトンで選択なのでマトンを。
飲み物はラッシー、チャイ、コーヒーで選択できるのでチャイを選択。

タルカリ
やや酸味のきいたジャガイモ等茹で加減は少しサクッといった食感 クミンがしっかりきいていてややオイリーでまろやか。
こちらのタルカリは現在ではジャガイモと野菜をにんにく、生姜などで炒めたりして提供されることが多いよう。一般的にスパイスはフェヌグリークシード、ターメリックパウダー、クミンパウダー、チリパウダーを使うのが多いそう。
一度しか使用してませんが、フェヌグリークシード(ホール)がちょうど自宅にありましたw
基本的にフェヌグリークシードは黒くなるまで炒めて甘い香りを引き出すので、タルカリを食べる時はどれがフェヌグリークなのか探すのも楽しいかも知れませんw
また、時々カレーの上にかかっているカスメリティはフェヌグリークの葉を乾燥させたものです。
ダル
ダルは深い味わいで旨味がどんどんどんどん増していき、口の中全方向にふっくらと広がるような旨味。サラサラしたクリアな甘味がある。
マトンカレー
こちらはダルの奥にあるカレーになります。
トマト系の酸味が少し、マトンの匂いは強くなくちょうどいい具合の香り。
サク(サーグ、サグ)
意識して食べたことがない気がする。
燻された様な香りをまとっており意外！旨いw
なんだろ、中華料理屋さんで食べる青菜炒めの様。
こちらそもそも何なのか本など購入して調べたところ、ざっくり言うと<青菜のスパイス炒め>だそう。サーグは青菜という意味で、他のお店ではブテコサーグと書いてあったりも。ブテコとは炒めると言う意味。ちなみにネパールでもっとも一般的なものはほうれん草、からし菜などが使われているそうで、高菜は高価なので、家庭ではあまり使われることが無いそう。
グンルク(グンドゥルック/gundruk)
アチャールの奥にある色が濃い緑のものです。
発酵してるのかな？酸味か程よく。これはたしかにカレーに合わせたくなる。調べたところ、グンルクは無塩発酵させた青菜を乾物にしたものだそう。
アチャールの下にあるものは
チャトニというもので、マイルドでいちごジャムの様な風味。これは使い方がいまいちわかりませんでしたw勉強不足ですね！
そして、食後の飲み物はチャイじゃなくてラッシーがきたwこちらのラッシーは甘味はあるものの甘ったるくなくキュッとした酸味が特徴。
ネパール料理好きなのですが、こうやって食べると知らないことが増えて楽しいですね。お店によって使っている食材や加えるスパイスなど少しずつ違うと思いますので、各お店がどの様な味付けや食材を使っているのかも気にしながら食べると単に食べるだけでは更に楽しみながら食べられると思います✨
