スパイシーなパダン料理
都内でインドネシア料理店というとジャワ料理やバリ料理が主体と思われますので、なかなかパダン料理をいただけるというと聞き伺いました。
新大久保駅からすぐ。イスラム横丁のおうさか苑が入っているビルの３階にあります。外に看板があったのかもしれませんが、パッとみつけることはありませんでしたので、おうさか苑さんを目印に入りました。
店内は暗く、昭和のスナック風。ママさんがひとりで切り盛りされています。話しかけるとはっきりと聞きやすい日本語で明るく応えてくださり、ホッとしました。
夜のメニューはとても豊富。肉、魚、ご飯もの、麺料理、スープ、など４０以上。 サテ・アヤム、ナシゴレンなどよく知られたもの以外にも聞いたことのないメニューがたくさん。魚がラインナップされているのもうれしい。
ビーフ・ルンダン Beef Rendan \1,380
パダンの代表的な料理と聞いていたルンダンをオーダー。牛肉のカレーとも言われるようですが、ソースよりゴロっと大きく入った肉をいただくお料理だと思います。メニューの日本語表記は「牛肉のココナツミルク煮」とありますが、スパイスがかなり効いていて辛い。しかしコクがあり、肉の旨味も出て美味しいグレービーです。これを単品で食べきるのは厳しいのでライスを追加でいただきました。ご飯がすすむ味。
グライ・ウビ Gulai Ubi \1,250
キャッサバの葉の炒め。珍しい食材ということで、オーダーしました。野菜が豊富ではないインドネシアではポピュラーな野菜のようです。こちらはココナツミルクの香りがたっぷりでほんのりスパイシー。キャッサバの葉自体にはあまり特徴的な香りや味を感じませんが、笹の葉のような繊維質が感じられます。
ポーションはいずれも少なめなので、一人でいただくにはありがたい。お値段はアジア料理系としては正直いずれもお高めですね。豊富なメニューで日本人に媚びない味付けでいただける貴重な存在。これくらいは取って当然かもしれません。
まだまだいただいてみたいお料理もあるのでまた伺いたいです。
●パダン料理
インドネシア西スマトラ州各地の料理の総称。インドや中近東の料理の影響を受け、肉や野菜のカレーが多い。トウガラシを使った辛い料理が多い。インド料理と異なり、ココナッツミルクで煮込む料理が殆ど。
一般的なスパイスはトウガラシ、シャロット、ニンニク、レモングラス、ショウガ、ウコン、ウコンの葉、ナンキョウ、コショウ、コリアンダー、キャンドルナッツ、乾燥したキャニモモ。(Wikipedia)

「辛いの大丈夫？」と聞かれ、「大好きです」と答えておくと、ホント辛いの来ました。なかなかこれは美味しい。テーブルのケチャップマニスとか、辛味は足せないですし、辛味があるところにかけて初めて美味しいです。
