東池袋の牛タン専門店多津よし。
やっと行く事ができた。
先に言っておくのだが、人生で1番美味い牛タンだった。
まず、ここは完全予約制になった。
なったというのも、前から気になっていて前回訪問した日の前日から完全予約制に。
そしてなかなか電話が繋がらない。
今回やっと電話が繋がり、予約する事に。
ずっと運と縁の無いお店だったがやっと行く事ができた。
1週間前から予約する牛タンステーキ、これは必食だ。
職人肌で接客も見た目もちょいとクセのある店主が繰り出す牛タンは他で食べる事のできない極上の品々。
太助で修行し、この地に腰を下ろして牛タン一筋26年という料理は完全に太助を超えている、そう感じた。
一本のタンの様々な部位を食べるのだが、茹でタンから始まってテールスープまでどれも全部美味い。
味付けはシンプルなのだが、最高の食感と止まらない旨味。
素材の味を活かしてなんぼでもいける牛タンは初めてだった。
これより味が濃くても薄くてもバランスが取れないと思うまさ、絶妙の味付けは一流の腕がなせるわざ。
とろろもその場で店主が擦る自然薯に出汁、卵黄、青のりと一手間加えてこれまた美味い。
麦飯と合うのでこれから暑い夏や食欲がない時でもサラサラ入る。
そもそも食欲ない時に来るお店じゃ無いけどね。
今まで中々来れなかったがここは絶対にまた行こうと思う。
牛タン好きは是非行ってみて欲しい。
再度言うが過去一の牛タン、そしておすすめは予約して牛タンステーキだ。
