The duck thigh meat purchased from Nishizaki Farm in Ibaraki Prefecture is never frozen before cooking. They use free-range ducks that are fed safe feed without any vaccinations. Among the duck dishes, the grilled duck thigh is especially recommended. Since it is thigh meat, it is chewy and has a strong flavor because it has been exercising. It is characterized by the fact that it is seasoned only with salt, using a combination of two types of salt, allowing you to enjoy the flavor of the ingredients. There are also menus for each part of the duck, such as thymus, liver, heart, gizzard, tongue, neck meat, and chicken breast.

The soba noodles are mainly Hitachi Aki soba from Ibaraki Prefecture, with local varieties from Tochigi Prefecture depending on the season. In the summer, when new soba is in season, we use a unique blend of Kita-Wase soba from Tochigi Prefecture and other varieties to make Shisoba. Black coarsely ground soba noodles are made by mixing coarsely ground flour with local varieties from Fukui Prefecture, and all soba noodles are 100% buckwheat flour. The most popular dish is Kamo-seiro.
