池袋駅にある「麺屋 Hulu-lu」。店主のハワイ好きが高じてハワイアンな装いの店内はカウンター5席、2名用テーブル3卓。地鶏を使ったスープや全粒粉入り自家製麺など、店主が名店「ちゃぶ家」（閉店・護国寺）出身だけあり、随所にこだわりが光ります。土曜12時30分到着し外待ち12名に接続、約1時間後に入店。調理は全て店主お一人なので回転は遅めです。

丸鶏と鶏ガラを組み合わせあ黄金色の鶏スープに、煮干しが軸の魚介ダシ入り塩ダレで味のバランスを調えています。スープはあっさりしていますが、味に奥行きがあり美味しい。中細ストレート自家製麺にハワイの水を使用するこだわりにも注目です。名店仕込みの技が光る一杯を味わえます。ご馳走さま
