茹で、焼き、煮る、味付け全てに凝っている。
一番感動したのは蕪の飾り切りしたもの。
和菓子のような繊細な技術で菊の花のように飾り切りされ、かつ割りやすいようにちょうど良い深さで止めてある。
美と機能性を兼ね備えた逸品で最高だった。
