高田馬場のベトナム料理のお店「ノンラー」さんに伺いました。ノンラーというのは、ベトナム人の伝統的な円錐形の葉笠のこと。良く写真で見かけますよね。
高田馬場駅早稲田口の前の大通り右側を落合方面に7分くらい歩きます。駅近ではないですが、道沿いなのでとても分かりやすいです。
ご主人の転勤先のベトナムを頻繁に訪問していた友人が案内してくれました。
【注文内容】
ノンラーパーティーセットA 2,500円/一人
アラカルトより色々なお料理が楽しめると友人がチョイスしてくれたセットメニュー。
①生春巻き
ライスペーパーで包んだエビやハーブ。モチモチの食感でたれはスウィートチリソース。
②揚げ春巻き
外側はパリパリ、中はモッチり。豚の挽肉や野菜を巻いて揚げた春巻きは絶品。
③青パパイヤのサラダ
薄くスライスされた青パパイヤを千切りした野菜に混ぜたサラダ。辛味の少ないさっぱりな味付け。砕かれたピーナッツと揚げせんのトッピング。ベトナム料理の定番です。
④鶏肉のライム葉焼き
ライム葉で焼いた風味豊かな鶏肉。
⑤野菜の炒め
⑥バインセオ
ベトナムのオムレツ。米粉を混ぜた生地にターメリック（スパイス）で黄色く色付け、野菜炒めを包んでクレープのように折りたたんでいます。お皿からはみ出しそうな大きさ。パリパリ感がたまらない。
⑦牛肉のフォー（鶏肉のフォー）
春雨の太いバージョンのライスヌードル。スープはさっぱり、ハーブの香りが出しの旨みをより一層引き出します。
⑧デザートは、タピオカ。
天井からぶら下がっている飾りが可愛い。
異国情緒溢れる居心地良い店内で、ヘルシーで風味のあるベトナム料理を堪能しました。
