骨董通りを奥に進み、
行列店、クリントンSTパンケーキの路地を入ると
お洒落でどこか可愛らしい外観のレストラン
5年前の雪が残る日に、オープンしてすぐ
訪問して以来の再訪となりました
このフレンチ&イタリアンの激戦区で
5年勝ち残ってきた実力はいかに…？
現在の高谷邦人シェフが提唱するのは
バターやクリームを極力使わない
人に優しい繊細なフレンチ
春の旬の高級食材をしなやかに
時に大胆に取り込んで
美しく瑞々しい春の芽吹きを表現してくれました
スタートは、
ふんわりホワイトでアートな佇まいの
スペシャリテのスキャンビと柑橘のマリネ
ほうじ茶のムーズに
キャビアを上品に添えていただけば、
とってもクリーミーでしっとりと美味しい
そして、
白アスパラガスと雲丹・地蛤のカルパッチョ
春のフレンチといえばホワイトアスパラガス♫
和食の蛍烏賊と同様
あちらこちらのお店で食べまくって
最近少々食傷気味でしたが
シルク流のホワイトアスパラは
キャンバスの絵のように遊び心あふれるお皿で
蛤や雲丹とともに、美味しくいただきました
また、メインの黒毛和牛”阿蘇王も
ありがちな赤ワインソース等ではなく
西京味噌でいただきました
甘く溶けるサーロインの脂が
和の味噌味と絶妙にマッチして
新鮮な美味しさを楽しめます
最後は、苺スイーツのバースデイプレートで
お友達のお誕生日をお祝い(^o^)
スマートで丁寧なサービスのおもてなしや
素晴らしいCPもあり、
たいへん満足できるディナーとなりました☆
