あの「ナリサワ」で修業し、「カンテサンス」でスーシェフをした根本憲一氏が独立したということで開店当初から話題になっていた南青山の「NEMO」さん。
私はちょっとひねくれたところがあって、開店当初から人気が高いと、私が無理に行かなくてもいいのかなと思ってしまいます。
2020年にオープンして、2年あまり。そろそろ訪問してみることにしました。
南青山にあるお店はあらゆる面で完璧な店でした。平日のランチでゲストは計3組なのに、ソムリエ2人、サービス係、シェフのアシスタントと、計4人位いて、スタッフの多さに驚きました。もちろんサービスも的確です。
ランチコース6皿9900円。メニューは食材1品のみ記載されています。
●鰹
勝浦の戻り鰹。ワラで表面を燻します。ナスとオクラとキュウリのソース+バジルのソース
●ワタリガニ
夏野菜とワタリガニのスープ。はすいも、ズッキーニ、フルーツトマト、アボカド、ワタリガニの旨味たっぷりの冷製スープ
●出来立て熱々のカンパーニュ 本当に美味しいです！
●富山のホタルイカ
ホタルイカの内蔵ソース。天然のセリは噛むと爽やかな香り。ホワイトアスパラも。
●下田の金目鯛
脂が乗った金目鯛は皮目はパリッと中はレアに、ソースはお魚の旨味をギュッと凝縮したものに新ワカメ、島らっきょうも良い食感です。
●スペイン産イベリコ豚
表面は香ばしく中はピンク色。ボルドレーゼ、グリーンアやスティックセニョールを添えて
●黒ごまのスフレ
焼きたての熱々！黒ごま用ミルで引いたゴマを振りかけて
●ほうじ茶のアイス
●カヌレ
日本はちみつでコーディングした本格派のカヌレは、食べる時間まで計算して作られているのがすごい！
シェフは釣り人でもあるらしく、魚がお得意とか。
東京で美味しいフレンチの魚料理が堪能できるお店としても覚えておいて損はないと思いました。
とにかく私の好みの店のひとつとなりました。
