シェフが漁港に行って買い付ける魚という素材をメインにしたコース。メニューをみても食材の名前だけ。魚のチョイスも鹿肉もデザートの梨や栗も、好きなものだらけで嬉しい。ワクワクします。この日は帆立が白子に変更でした(さらに好き)。
ペアリングワインもオーダーします。フレンチだけではなくイタリアンも出ます。
素材の味を活かす料理で、魚そのものには味付けがほぼされていない。合わせる魚介のスープやソースで味が付く感じです。穴子は蒸すのではなく、表面だけを炙る。きんきは魚介のスープ。白子はフリット。活〆の伊勢海老には雲丹のソース。低温調理された鹿にはアンティチョークと銀杏のソース。
梨と栗のデザートもとても美味しい。季節の味わいです。
量や大胆な味付けを好む人には物足りないかもしれんませんが、個人的には大満足。
