2011年1月より、臼井氏の店「鮨臼井」として開店。
おめでとうございます。
開店から丁度１０年目、「鮨 えん 青山店」開店時から、表参道の本店とは異なる独自の店作りを行ってきたのを思い出す。
「鮨 えん」としては表参道の本店に続き、青山店も閉店。
これからは仕入れも臼井氏の思うまま。
以前より種の質は上がった。
これで舎利が口内でハラリとなり店内禁煙になれば足も向かい易くなる。
喫煙OKの数少ない貴重な店として重宝されているが、今後はその点に関しては思案中とか。
ネタケースに入っているとは言え、煙とは無縁の鮨が食べたい。
期待してます。

鮨 えん 青山店
夕方から明け方３時迄の営業。
定休日が従来の日曜日から土曜日に変更。
これは本店の鮨えん(表参道)が無休から日曜定休にした為。 久し振りに訪問
鮨えんの支店だが、握り手の臼井氏は、えん育ちではなく、腕を見込まれての支店展開。
表と裏手の計２名で商っている１０席弱の常連主体の小体なお店なので予約を入れた方が無難。
種は本店と一緒の仕入なのか、際立つ質の食材はないが、限りある素材を丁寧に仕込んでいる。
穴子は塩と煮詰、海老は北海縞海老と甘海老を続けて（頭は焼いて）、烏賊も種類に合わせて塩や煮切で続けて出して、味や食感の違いを楽しませてくれる。 玉子は擂身入と普通の２種。 舎利は柔らかすぎて粒に張りがなく、口内でハラリとばらけず好みではない。
臼井氏の接客には好感。
雰囲気のある、店舗と握り手の印象がマッチしているお店。
