外苑前にあるレストラン『An Di（アン ディ）』を訪ねます。
同店の仕掛け人は、グランメゾンのシェフソムリエとして活躍した大越基裕氏。意外にも彼が選んだのは、フレンチやビストロではなくベトナム料理。もちろん単純なベトナム料理ではなく、まるでフレンチのように美しい料理を楽しめる”モダンベトナミーズ”でございます。お酒を控えているのでオーダーしなかったが、大越さんのプロデュースとあればもちろんワインへの期待度も高い。ただ、アルコールについてはワインばかりに頼るわけではなく、日本酒や焼酎なども意欲的に取り入れているようです。次回はぜひペアリングをいただこう。
それでは、コース料理のお皿をご紹介してまいりましょう。
「バインミー」鶏とパイナップルのバインミー。甘酸っぱく独特な風味を持つタマリンドが現地感を作ります。
「ティーリーフサラダ」アンディのスペシャリテ。自家発酵した八女の茶葉を乳酸発酵。このニュアンスは、ペアリングへのインスピレーションを高めるそうだ。一緒に、甘納豆やドライココナッツや八朔などを。味覚、食感共に新感覚の一皿。
「チャーカー」チャーとは”揚げた”、カーとは”魚”という意味。鱒をスパイスとともに練り込んだ、さつま揚げ的なアウトプット。昆布出汁の新玉ねぎのスープに落としていただきます。
「生春巻き」海老の生春巻き。ベトナミーな雰囲気ながら、お寿司の太巻きを彷彿とさせるアウトプット。桜海老、車海老、野菜やフルーツで構成されております。３つの味のバリエーションが楽しめるが、最後はベトナム版のツメといったところ。
「ホワイトアスパラ」ココナッツで火入れしたというアスパラ。ミックススパイスを重ねるのがベトナムっぽさ。鰹の藁焼きとともにいただくが、辛子のソースが２つの食材をブリッジさせております。
「豚肉」まるでポッサムのような雰囲気で、エゴマの上に豚肉や様々なハーブなどを重ねていただきます。茶葉で煮込んだという豚肉自体も美味だが、甘味の強いレモンを重ねるなど非常にユニークな料理。ふきのとうと味噌、柚子胡椒とで和えたソースで。
「フォー」鶏ガラとトマトのスープ。コブミカンや海老で作ったというオイルが、アジアの世界に連れていきます。スープ自体がもう美味しいが、もっちりとした食感のフォーも好感度が高い。
「ココナッツプリン」蜜柑とカルダモンのシャーベットを重ねて。
ちなみに、An Diとはベトナム語で”召し上がれ”という意味だそう。ぜひ”An Di”を”An Di”してみてください。笑 ご馳走様でした。
