次郎が鮨業界に革命を起こしたのは確かかも知れませんが、そこから一歩も進化しようという試みがなく、店の雰囲気やホスピタリティも良くなく、値段に相当不釣り合いな店になってしまっていました。そのせいか店もガラガラ。
・100度に熱したおしぼりを絞らないと職人失格。失敗してもやり直しができる簡単な仕事
・他の鮨屋の海老は冷たい
・他の鮨屋はウニにお金を出してない
などなど講釈垂れるがそこまで美味しいわけではない。握りもおにぎりのような不恰好なもの
若い職人さんには
・お前はもう巻物まくな
・巻きがゆるい → 巻き直して客に提供
・軍艦が小さい → これをそのまま客に提供
・追加オーダー説明してる間に手を動かして準備しとけ
などなど客に聞こえるレベルで叱責
一時代を築いた次郎を体感するには良いかもしれませんがここより美味しくて安くて居心地の良い鮨屋はいくらでもあるのでミシュランも海外ウケを考えて入れるしかないところに闇を感じた1日でした。
