◆「RYUZU」ゲリラコラボディナー
都内で5連食した後、
新潟の名店「おにや」の
変態シェフ 鬼嶋さん自らが育てた
シャポン鶏を、
ミシュランフレンチ「RYUZU」に持ち込み、
飯塚シェフが特別料理を振る舞うという
スペシャルなゲリラディナー。
ご一緒したのは、創業60年の新潟の老舗名店
「兄弟寿し」本間さんと、
鬼嶋さんとの3人。
突然という事もあり、
暇だった私も運良く伺わせて頂きました。
これまでに使用してきた銘柄鶏とは、
皮の脂も肉質も全く異なるものだと言わせしめた、
鶏の変態 鬼嶋さんが手塩にかけて育てた、
ストレスフリー飼育によるシャポン鶏。
この日は、通常コースメニューに加え、
シャポンを使用したスペシャルメニューの
全10品＋デザート3品、
そしてワイン8銘柄を、
じっくりと堪能させて頂きました。
初めて扱う素晴らしい素材を、
瞬時に見抜くシェフの経験値における洞察力。
そして、酸甘の微調整された
色とりどりソースと合わせ、
目の前で芸術的に仕上げていく
傑作のライブに、皆さん目が釘付け。
同じ素材を使っている事を感じさせない、
味覚と食感を絶妙に使い分ける、
流石の調理手腕に、常々感動の連続でした。
こんな素晴らしい機会に、
居合わせて頂けた事に感謝です。
終わったのは、終電もとっくになくなっている
深夜だったので、みんなでまろ宅に移動し、
2名の変態料理人と1名の爆食変態で、
美味しいお酒を飲みながら、
朝まで食への変態トーク。
最高の一日でした！
