気になっていたリューズにふるさと納税で行けると知り、ウッキウキで納税して念願の訪問。
北海道の別海町の食材を使ったフルコースです。
ロブション出身の方のレストランは数軒訪問したことがあるのですが、味が濃く感じたり組み合わせ方が僕の舌じゃ理解できなかったりと、好みだったことが今まで一度もなかったのですが、リューズさんはめちゃくちゃ美味しかったです！
ロブション出身を感じさせるドレッセの美しさや、ヒラメに黒トリュフと薄く切ったパンを合わせて焼いたり、ホワイトアスパラガスをババロアに仕上げたりするフレンチらしさも感じさせつつ、それ以上に素材そのものの魅力を料理を通じて伝えようというコンセプトがひしひしと伝わってきました。
これは僕の舌が至らないところもあるのですが、よくあるクラシカルなフレンチってソースの味わいが強く食材が負けていたり、組み合わせがごちゃごちゃしていて使われている全ての食材を感じとることが難しかったりすることがたまにあるのですが、リューズさんは全ての組み合わせで全食材がいきいきと引き立てあっていて、バランス感がすごく好みでした。
素材を尊重した料理が好きな方には刺さる内容だと思います！
デセールもすごくセンスが良くて、チョコレート・ほうじ茶・黒ごま・お米の味わいと食感の移り変わりが感動的でした。
またぜひ再訪したいです。
