神谷町駅から坂を登り六本木方面へ。
華都飯店（シャトーハンテン）の季節限定「火鍋」を食べたく来店しました。整腸作用スゴそう（笑）。
店内は紺色を基調とした、とてもエレガントな雰囲気の中華料理店。来店時は殆ど満席で賑わっています。

【レポート】
⚪︎ 華都特製中華風お刺身サラダ
‥ほんのり酸味と甘みのある、さっぱり味のドレッシングが、サラダによく合います。美味しいです。
⚪︎酸菜火鍋（※注）
‥スープは干貝柱や干海老を使った出汁の旨みに、乳酸発酵した酸菜由来の酸っぱさが特徴。単に酸っぱいというよりも、体に良さそうな酸っぱさでした。それに加えて、魚介や食材の旨みがたっぷり！
備長炭の強力な火力でグツグツ煮え沸る鍋の中に、以下食材を投入。
・白菜：主役の乳酸発酵した白菜。
・細巻海老（さいまきエビ）：車海老の一種で10cm以下の小さなサイズの海老
・豚バラ：一度火を通して余分な脂を落としたバラ肉
・凍り豆腐：凍らせる事で旨みを凝縮させた豆腐。
・牡蠣、渡蟹、帆立、春雨、他
長ネギや腐乳（ふにゅう）、醤油の薬味も用意がありました。更に辛みを調整する青唐辛子や麻辣などもあり、味変も色々と楽しめました。
食べてると体がポカポカ、というより暑い。
鍋の中央を覗くと炭が真っ赤。熱々鍋は火傷にご注意。
鍋の〆はザーサイ白飯、スープとご一緒に。
ご飯は御代わりできます。
スープはラストになればなる程、旨みが凝縮されていました。鍋は結構深い。

※火鍋料理は中国北部の雪国の料理であり、雪の下で白菜を乳酸発酵させて温度管理を行っているようです。現地では食材はもっとシンプルとの事。
