王道四川でありながら、
散りばめられた工夫の数々。
気を衒わないけど、
一品一品に感動と驚きが溢れます。
計12品のコース。
メニューは2カ月ごと、
奇数月に全品入れ替えとのこと。
どれも素晴らしく美味しかったのですが、
この料理にやられました。
⚫︎カマスとナスのネギ油掛け
カマスはほろほろっと崩れる絶妙な火加減。
ナスはトロッととろける。
下にはネギ油とお醤油。
カマスの上品な白身を堪能してると、
ナスがトロッと溶けて、
焼き料理ですが、
お刺身を食べているような
不思議な感覚。
⚫︎冷やし酸辣タンメン
酸味と痺れが絶妙。
酸辣の下にはジュレ。
スープとジュレを混ぜ混ぜして食べると
これまた新しい食感。
麺は極細麺。
コースの最後でもツルッといくらでもいける。
⚫︎杏仁プリン
そして、コースの締めは杏仁プリン。
アイスとプリンが濃厚。
料理はもちろん絶品ですが、
シェフのお人柄、スタッフの気配りも素晴らしい。
特別な時にまた訪れたいお店です。
腹いっぱい、胸いっぱいです。
