今まで鮎はタイミングで食べる機会も幾度とありましたが、過去一番美味しいと思う内容でした。
シェフさんの気さくさに加えて、色々最後に料理についてお伺いしましたが、色々食材をこねくり回す様な料理もお好きだとおっしゃってました。
ハーブのエスプーマ、竹炭のチュイユ、骨までしっかり柔らかく味ものった、食感、香りに余韻、旨みと塩味の素晴らしい一品でした。
どれもこれも美味しかったです。
