麻布十番 御料理 辻《お昼のおまかせ》
日本料理の名店数軒で11年の修業を経た辻佳明氏が2017年6月に麻布十番で開業した日本料理店。
初年度からミシュランガイド日本料理の1つ星を獲得､以来2024年まで8年連続で星に輝く実力店。
日本文化と古典を尊び､季節を告げる八寸をはじめ美しい骨董の器に盛り付けられた彩りの料理を楽しめます。
檜のカウンターと静寂な空間と心落ち着く穏かな佇まいの店内。
お昼は八品。先付け・お椀・お造り・焼物・八寸・炊き合わせor揚げ物・ごはん・甘味
一、先付
帆立､子持ち昆布､菜の花
とても繊細かつ優しく一品目。
二、お椀
海老と野菜の白味噌のお雑煮
出汁､具材共に抜群。
三、お造り
富山のめじ鮪､道産のアオヤギとバフンウニ､抜群の刺身三品。
四、焼き物
対馬の穴子と焼き芋
こんな旨い穴子は久々という風味食感抜群の焼き物。
五、八寸
珍味にお浸しと揚げ物など旬の食材をそれぞれ違った風味や調理法で仕上げた七点の季節の盛り合わせ､味わい含め素敵過ぎる。
六、揚げ物
白魚の揚げと銀杏､堪らない。
七、ごはん
牡蠣の炊き込み土鍋ご飯と赤出汁にお新香､牡蠣ご飯が美味すぎて三杯お代わりしてしまった笑
八、お菓子とお茶
水ようかん､味に口どけ最高。
