麻布十番の商店街から一本入り、どこかで見たことのある『蒼い扉』を開けると、目の前に広がる自然な樹の穏やかな空間が広がる。オープンキッチン特有の一体感とスタッフとキッチンからあふれる躍動感は客席の空気に華を添えます。
「日本一美しい村」に選ばれている山形県最上郡大蔵村。その大自然の中、生産者・加藤貴也に育てられたチェリバレー種の合鴨、最上鴨はクセなくジューシーな肉質は誰が食べても美味しく、非常に低カロリーで高タンパクです。身体のことを気にせずに余すことなく美味しくいただけます。お店ではコースのみの案内。
『最上鴨』を丸ごと堪能いただけるコースを堪能。最上鴨の脂から丁寧に抽出した鴨油（ﾔｰﾕ）。鴨油は不飽和脂肪酸が多く身体に良いとされています。最上鴨の鴨油でアヒージョする春菊・椎茸は鴨旨味を纏った一味違う野菜の楽しみ方。続いて、鴨油と特製無添加の鰹出汁を合わせた、新名物『鴨しゃぶしゃぶ』。赤身2種（むね、もも）やつくねをネギと一緒に最上鴨の旨味が溶け込んだ極上スープにしゃぶしゃぶしていただくのは格別です。〆は鴨と蕎麦。これ以上の相性の良さはありません。
