中目黒いぐち、麻布十番へ。
中目黒の名店が十番へ。気さくで話しやすい大将と、こだわりの焼き鳥の数々。柔らかめの焼き鳥が好きな大将は、鶏肉を塩麹に一晩漬け込み、鶏肉の柔らかさと旨味を最大限に引き出してから焼く。たしかにふっくら柔らかくジューシー。外側を固めに焼く技法が一般的ではあるが、これはこれで美味しい。肉汁にお酒が進む。焼きたての串が冷めぬよう、熱した石の上に置く気遣いも。
行きたいお店がまたひとつ増えました。
