確かな技術と手間を厭わぬ仕事ぶり
東京の菊乃井さん。
ちょっと早く着いてしまって、お店はまだ開いていません。
待っている間に長いアプローチをじっくり見ると、小さな社があります。
僅かな段差がいくつかあり、その端にライト。
竹垣は格子ではなく縦に組まれてすっきりした印象です。
何だかとても落ち着く空間。
じきに中に案内されました。
今回はカウンターではなく、テーブル席。
若い料理人さん達がきびきびと働いています。
最初のお膳はお祝いスペシャルサービス。
紅白なますにお赤飯。
こういう心遣いが、嬉しい。
お味はもちろん申し分なく、赤い器が華やかです。
それぞれのお料理は写真の解説を見ていただくとして、毎回違う演出をできるのはお見事!
そして、この季節感。
印象に残るのは、やはり美しく手の込んだ八寸。
黄身醤油で食べる辛子乗せ鮪は、何度食べても美味しい!
それから、鰆の杉板焼きには驚きがありました。
焼けた杉の香りが鼻をくすぐります。
デザートの完熟柿がゼリーのようで、皮まで食べられます。
代白柿とはあんぽ柿と同じで、地域によって呼び名の違う渋柿だそうです。
渋はすっかり抜けて、甘い、甘い♡
今回も美味しかったけれど、内容は前回の方が好みでした。
お料理はほぼ月変わり。
また、別の月に行きます!
京都の本店以上の味
京都の本店に何度か行ったものの、やはり東京に住んでいるからには赤坂店にも行かなくてはね。
インスタ情報によると、メニューどころか仕入れも京都と同じ。
魚は明石が主力。
なんと、水も毎日運んでくるそうです。
それなら本店と同じものができるはずではないですか。
あとは板前さんの腕次第♪︎
2月のメニューはひな祭り。
最初に杯にふるまわれたのは、お白酒のようなにごり酒。
ミルキーな甘口。
次のお飲み物は?と聞かれて、ここは日本酒を一合いただきましょう。
而今の純米酒、フルーティーです。
ちょっとしたお祝いだと伝えてあったせいか、赤い器で、お赤飯と紅白なますが出てきました。
華やかな気分になります。
帆立このわた蒸し、あらればちこにはとてつもなく手間がかかっています。
珍味コノワタで深味のある味わい。
貝あわせの器を陶器で作ったお重に八寸。
食感の異なるウド、イカ、筍を木の芽あえにしたものが、本日の一等賞!
これ、人が見ていなかったら、指で残らずなめちゃいたいぐらい。
お造りのマナガツオには薄くスライスした昆布を貼りつけてあります。
丁寧な仕事ぶり。
百合根饅頭のお椀を開けるとトリュフの香り。
フォアグラも使うとは、攻めますね~。
クワイに干支、兎の文字入りのミニ絵馬。
西洋食材も上手に取り込んだ日本料理です。
塩ぶりは、塩水に浸けるのだそうです。
お酒をかけながらじっくり焼くのですって。
雲に見立てた白子の蒸し物は、三宝柑という柑橘の器に入って良い香り。
お腹いっぱいなのにご飯はちらし寿司。
これも美味しくて、残さず食べきりました。
添えられたゴボウのすり流しには、揚げたゴボウが入って良い風味。
ゴボウって良いお出汁が出ますね。
デザートは、濃厚なピスタチオアイスクリームにマンゴーソース。
これだけたくさんのお料理が出て、最後まで最高に美味しいもの尽くしでした。
同じメニューで比べたわけではありまが、味は京都の本店より上だと感じました。
お昼でも個室の座敷でいただけることと、仲居さんのはんなりした見事な接客がある点は、京都の本店の方が魅力的です。
トータルでどっち?
うーん迷いますね。
一度では解らないから、また行ってみます!

It's a meal with people I haven't seen in a long time. You can't go wrong with the food and service here. I can proudly introduce it. We were greeted by a weeping cherry tree in full bloom at the entrance to the restaurant. I was also enchanted by the beautiful tableware that was created to match the cherry blossom season. The first dish was gorgeous! The rolled omelet was in the shape of a butterfly, and the lily root was in the shape of a cherry blossom petal. The miso-marinated avocado was delicious! The sashimi was red sea bream and small sagochi. The red sea bream was served with soy sauce, and the small sagochi with ponzu sauce. The bowl of shrimp dumplings, which caught my eye in the cherry blossom mother-of-pearl design, was a bowl of soup. The skill of a master is soothing to the soul. The seared cherry salmon is served with vinegar? I thought it was served with mint sauce, but it was an exotic and surprising taste. It's a bold dish! What looked like somen noodles was actually very thinly sliced yam. It had a crispy texture. It must have been hard to cut. The bowls, like the sakura mochi, were filled with plenty of kudzu paste. The dishes were also beautiful. The bamboo shoot rice cooked in a clay pot was fragrant, and even the burnt part was delicious. We takeaway the leftovers home. The dessert was almond tofu with lemon curd sauce, which was refreshing. I'm relieved that the people who came with me seemed to be satisfied. I wonder when I should go next?
