It's physical labor, so it's exhausting. When you're tired, you want to consume vinegar and garlic, right? That's why Enmado. I ordered hot and sour noodles and mini mapo bowl for 1,350 yen. There were a few empty seats, so the wait was about 10 minutes. The food was served sooner than expected which was helpful. First, let's start with the hot and sour noodles. The texture of the soup is low enough that the noodles can be easily lifted with chopsticks. The sourness and spiciness were both mild, and the seasonings themselves were neutral, and the flavor was adjusted to suit the taste of the target consumer. As for the seasoning, I definitely get the impression that it was put together reasonably well, but I really like the way the shiitake mushrooms are used. Actually, I almost copied and pasted a post from the nearby Chinese chain Yangzhou Merchant, but I think the basic recipe is quite similar. Of course, if you look at the details, there are differences, such as our store using more black vinegar and Yangzhou Merchant's using more beaten eggs, but I don't think there is a big difference. You can choose the level of spiciness of the mapo bowl from 5 levels, and I chose 3, the middle one. The hemp has a strong effect, but it doesn't make my lips numb, and the chili oil is kept to the bare minimum, and the flavor is milder and more authentic than I expected. Also, in terms of volume, I think it's perfect as it has quite a bit of food for a mini dish.
